I have about three kits with dry yeast packets... My Question is: is it okay to leave yeast packets at room temp in kits till iI can get to kits (I keep my home around 75 degrees F) or would it be best to take the yeast packets and store in fridge?
 
Agreed with the refrigerator - but (and I am speaking from personal experience here) not in the freezer. I had a half-pack of Nottingham in there for a couple months, in a freezer zip-top bag with all the air out, and when I went to hydrate it, it was sluggish and didn't form much bubbles or foam. Even an hour later, nothing new. So, I added 1/3 pack of fresh Notty, and 20 minutes later, had some nice action going on.

So, and I was talking to Yooper about this elsewhere sometime ago, freezing your yeast may not be the best thing for its health. Cold, yes - frozen, no.
