I didn't know whether this one had to go here or in the Beginner's Forum.

I'm brewing a very small batch this weekend.

According to BF's Yeast Calculator, if I pitch the whole smack pack, without starter, I'll have the double of the yeast that I need for this brew.

Of course, I don't want to throw half of the smack pack in the wort for no reason at all, nor do I want to dump it.

Can I keep the yeast in a sanitized jar for futures uses, WITHOUT making a starter, or do I absolutely need to make a starter if I want to keep that half-unused smackpack?

Pitch it. You don't wanna mess with 1/2 a smackpack ( or maybe that's just me )

The thing is -- I was preparing to make a starter, as I'm brewing only this weekend.

But I went full hillaytaret and thought the yeast was 5 months old, as opposed to 2. I thought that, well, since I'm already set up for the starter, I should always put that preparation to good uses...

If I understand what you're doing, make a starter for the whole thing. Pitch what you need for this brew, and put the rest in the fridge, sealed very well. Next brew, you should be good to warm up and pitch if it's soon, or starter that batch if it's gonna be a while

Take a look at this pitch rate/yeast starter calculator. Has the option of over building a starter to have fresh yeast, yeast that hasn't gone through a brew cycle, to build from for your next brew.

Make a starter with the yeast you have, pitch what you need and save the remainder for your next brew.

Sounds like good advice. Why didn't I say that? Sounds familiar, though...
