Making my first all grain IPA. OG to be around 1081. Not super concerned about hitting all my numbers as I am such a novice. I will be using safale 005 dry yeast because I am comfortable with it and it has been forgiving. How many packets should I use for my 5 gallon batch. Also should i just sprinkle it on on should i make a starter. I have never made a starter, so I don't know how much to use ( 1 packet or 2 ) etc. Any suggestions using this yeast for this beer. I recently bought a stir plate, but never tried it. Any help would be great.
 
I had an IPA that was around the same OG and I used two packs and it came out just fine. If I remember I did pinch some from a pack so I would be just shy of two packs.
 
For a big beer like this one I'd use two sachets, but one will probably work fine if you can't get more... Rehydrate prior to pitching.

From the Fermentis website:

Re-hydrate the dry yeast into yeast cream in a stirred vessel prior to pitching. Sprinkle the dry yeast in 10 times its own weight of sterile water or wort at 27C ± 3C (80F ± 6F). Once the expected weight of dry yeast is reconstituted into cream by this method (this takes about 15 to 30 minutes), maintain a gentle stirring for another 30 minutes. Then pitch the resultant cream into the fermentation vessel.

Layman's translation:

Boil 1 cup water to sterilize.
Let cool, while covered, to ~80-86ºF.
Sprinkle dry yeast into water and let sit, covered, for ~20 minutes.
While chilling your wort, intermittently swirl the vessel containing the yeast.
When fermentation temperature is reached, pitch.
 
wow--thanks that helps alot. Ill use just under 2 packets-- does that mean i have to boil 2 cups of water and add 2 packs when it cools? or add both packets to one cup?
 
Yeah, I figured the amount I'd use for two packs.

23g yeast x (10 times it's own weight) = 230g

230g = 230mL

230mL = .97 cups

I really don't think it has to be super exact, though.
