I want to brew NBs bourbon barrel porter extract kit and would like opinions on the best yeast to use.

FERMENTABLES
- 2lbs Wheat DME
- 6.3lbs Dark LME

SPECIALTY GRAINS
- 1 lbs English Chocolate Malt
- 0.5 lbs English Dark Crystal
- 0.5lbs English Black Malt

HOPS
- 1oz Chinook (60min)
- 0.5oz US Goldings (15min)
- 0.5oz US Goldings (5min)

OTHER
- 2oz Oak Cubes with 16oz bourbon

OG 1.065 FG 1.021

Yeast options are:
- Danstar Windsor Ale Yeast.

- Wyeast 1728 Scottish Ale Yeast.

- White labs WLP 028 Edinburg

WLP 028 and the 1728 seem pretty similar so it probably comes down to the dry or liquid yeast (with a starter).

Any opinions or experiences?
 
i just made a Oak Smoked Porter...I used either SA-05 or SA-04. Pretty sure it was the 5 and it came out great. I typically am not a fan of liquid yeast since it is more of a hassle than dry. will only use if needed.
 
It depends on what style (dry, sweet or robust) you are going for. US-05 will be a very clean finishing yeast. You might be better off going with a Irish yeast that'll give a little more crazy to it. But, it's all personal preference.

I made an Irish Stout with Irish Ale yeast and it turned out fantastic. Good luck!
