I have a pack of Wyeast Ringwood Ale that I need to use and I am aiming to brew an oatmeal stout. Anyone used this to brew an oatmeal stout and what were your impressions (good, bad, indifferent). Wyeast mentions performing a diacetyl rest which I have never done before with an ale or stout. Thanks, Montanaandy
 
I used the equivalent White Labs strain (WLP005) on a brown ale. It was a one week primary, one week secondary, and I did not perform a diacetyl rest. I had no problems with diacetyl and I enjoyed the yeast character. I think I got like 67% apparent attenuation which was lower than what I was aiming for.
 
Diacetyl rests are easy. When you start to see the fermentation slow, warm it a few degrees (like 3-4). This will help clean up any diacetyl as well as encourage full attenuation.
