So I brewed up a triple about a month ago and hit an unexpectedly high efficiency of ~90%.I ended up with a starting gravity of 1.094 and due to my low mash temp my final gravity was 1.010 giving me an alcohol by volume of 11%!

Has anyone else seen this alcohol content from this yeast? I know Wyeast says it should only reach 9% but it is not uncommon for a yeast to go a bit higher. Now my dilemma is do I attempt to bottle condition as normal or pitch some champagne yeast to ensure carbonation in the bottle?
 
I wouldn't use champagne yeast since it could potentially ferment more sugars that your beer yeast didn't take care of. I would use a high gravity beer yeast.
