I pitched a WL001 PurePitch at around 75 degrees and placed my carboy in a nice dark place. Fermentation seems to have gone well, I'm 7 days later and still have activity. Where I'm questioning myself is the fermentation temp has been in the 61-63 degrees. What are effects of this low fermentation temp with WL001? What should I expect? This was the NorthernBrewer Chinook IPA extract kit that I subbed the PurePitch pack in lieu of the supplied Safale US-05.

Those temps will result in a clean fermentation character. I know the recommended temp range is higher but I've used it at 60F without any issues and I've heard of people taking it down into the upper 50's. I would recommend letting it rise into the high 60s at the ensure it's able to clean up after itself in a timely manner.

7 days? It's probably done. Take a gravity reading for the next three days. If it's consistent, it's done.
