I have a Mr. Beer kit. And I'll be brewing my very first batch today when my Witty Monk kit gets here soon.

I've been watching YouTube Vids on brewing. And I'm kinda confused on which way I should go.

When I'm watching the vids for Mr Beer. Some people boil there water. Then remove from heat and stir in HME. then let it cool a bit then pour into keg of cold water and wait till right temp to Pitch Yeast

Then others boil there water then remove from heat add and stir in the HME. then they return to heat and Boil mix for ten Mins then remove from heat to cool and then add to cold water in leg and wait for right temp to pitch yeast

Is there a differ outcome if done either way with the mix?

Also it was 7days in keg. But they prefers longer so would 14 days be to long? And then bottle and keep in Bottle for anyther 14 days???
 
From my limited knowledge of pre hopped malt extract, I believe you are only boiling long enough to sanitize your wort. In the second method you describe your water and HME will return to a boil to be sanitized for ten minutes.

As for time in the fermenter, many people ferment for much longer than 7 days. 7 days may be adequate time for the yeast to ferment out all of your sugars, but many byproducts can come from this process. Giving the yeast a another few weeks to clean up after themselves will result in less off-flavors in your final product.

I usually leave my beer in my primary fermentation vessel for 3 weeks to a month. This is completely fine. Patience will give you great results, but it is the hardest part about being a new brewer.

Other small things that will help you out in a big way is to pay attention to the temperature when you pitch your yeast and the temperature at which you ferment. For a standard ale yeast I usually pitch once the wort gets down around 65-68 and I try to ferment in the same range.

Thank u for the info. I will pay great attention to the temp. Im on my way to store to get a stick on temp gauge for the keg and also a temp gauge to keep where I'll be storing the keg so I can keep an eye on the Temp.

Ps. Off topic. Nice fish!! Did u catch that?

EDIT - and congrats on the nice brown! I caught a decent one this summer on the South Fork of the Snake River in Idaho. Why do I live in Illinois?

Nice brown. I spent some time in Victor, ID a few summers back. That place was magical.
I got to fish the frying pan in July, it was awesome. 20" cutty on the first cast.

EDIT: Victor is magical indeed. Great fishing, not crowded, and full of barley & hop fields!! Also home to Grand Teton Brewing Company, which puts out some world class beers, IMHO. Their Lost Continent IIPA is my favorite.
 
Is there a LHBS near you? Where do you get your equipment, ingredients, etc? I'm in Cobleskill pretty often.:mug:

I kno there a brew store in Latham. I don't know of any other place. U live in Coby.

Yeah the floods messed alot up. Lucky I live up high. But a lot of my friends lost stuff. And my railroad lost alot of tracks

It has been a while since I went over the Mr.Beer instructions. (available on line at mrbeer . com) Anyhow iirc, they say only to boil the water, stir in the extract and the put htat on 4 cups of cold water and fill to 8 quarts.

basiclaly the Mr.Beer fermentor can't handle hot water (or wort) so you have some cold water (cold tap is fine) in there, it helps bring the temp down as you add about 8 cups of hot wort to it. The boiling of a hompped LME might drive off soem of the hop flavors and aromas in the extra boil. Another reason for the hot water is to mix the malt in. It is very thick and requires heat to help soften when you mix it into water initally.

Biggest advice would be to go to the MrBeer site and get their instructions because that is how they have tested it out.

TIP: get a bowl of water, microwave and soak the cans in the bowl of heated water. This will make the extract softer for pouring. Oh and sanatize sanatize sanatize....

Thank you. Yeah I have the directions it says to just boil the water only. Witch I will do. I figured if u boil wort it would take away of the flavor. I'm getting excited. Been doing so much ready. And my HME's just came in the mail. Now just waiting for my Wife to get Home so I can run to Store and get some tools and a stick on temp gauge and tools.
 
Mr. Beer is an excellent way to learn how to brew in my opinion.
It just doesn't do a good job at teaching sanitation and only provides 1 step for cleaning and sanitizing.

Also, check the date on your cans. If they are over 6 months old I would re-hydrate the yeast that comes in under the cap to make sure it is still alive and ready to rock.
Simple to do:
boil a little water (microwave 1/3 cup or so)
cover and allow it to cool to 80-100F
sprinkle yeasties
wait 1/2 - 1 hour
if milky/foamy you are good to go, else you need to get some better yeast.

Try the one in Rensselaer on route 4. It has different stuff from the one in Lathem. I think it is called Hennesy Homebrew - just google Homebrew store in Alabny NY, and they show up, although the lathem store has like the first 5 entries.

From what I've heard, Hennesy has better/more stuff, but I haven't been in Hammersmith(lathem) so I don't know. Given you are in cobelskill (just looked on map) both of them are about as much of a PITA to get to. In which case I recommed mail order. I don't consider a 1+hour drive to be a Lhbs, I think that is a Dhbs (distant)

Only ones around are Hennesey in Rensselaer, and Hammersmith in Latham.
Bear Pond Winery in Oneonta used to carry a little bit of beer brewing stuff, but not alot. I usually order everything through the mail from Northern Brewer. Those guys have been great to me so far!

BTW, BlueMoonFishing - I also live in coby, we should get together for a pint sometime, I am just about to tap a Newcastle clone this weekend.

Actually you are better off ditching the yeast and getting some from the LHBS. While your there pick a pound of extra light DME to replace the booster. And a small thing of starsan As far as Mr B instructions? They suck.
I would boil your top off water the day before and toss it in the fridge covered of course. Make sure you sanitize your can opener and the top of the can if you aren't planning on boiling the extract at all. Also 2 weeks in primary, 2- 3 weeks in the bottle, then 2 weeks in the fridge (at least 48 hours).

+1, I started with a Mr Beer kit and when I did this I made much better beer.

+2 I started with mr beer and this method. Made some damn good beers and fueled my passion for the hobby.
