I used a partial extract kit to brew my first Witbier. On its 4 week birthday I kegged it and and the next day I forced carbonated it. While I admit it is not totally carbonated yet I noticed the flavor is very weak. Now that I think about a Witbiers cloudy characteristic (Mine is not too cloudy) I think I possibly made 2 mistakes.
1. I used Irish Moss in the boil
2. I strained the coriander and orange peels when I transferred to my primary
Is one of those reasons why it tastes watered down or is it just not matured yet?
