I used a partial extract kit to brew my first Witbier. On its 4 week birthday I kegged it and and the next day I forced carbonated it. While I admit it is not totally carbonated yet I noticed the flavor is very weak. Now that I think about a Witbiers cloudy characteristic (Mine is not too cloudy) I think I possibly made 2 mistakes.

1. I used Irish Moss in the boil
2. I strained the coriander and orange peels when I transferred to my primary

Is one of those reasons why it tastes watered down or is it just not matured yet?

This is my 5th batch and first Witbier attempt.
 
Did you put the orange peel and coriander in the boil, then almost immediately remove when going to the primary? Is that enough time to get much flavor out?
 
I used the whitelabs Beligian White Ale yeast, I don't recall the exact name but I beleive it was the correct one.

My OG and FG were right on spot as per the instructions, again I don't have the readings or the paper in from of me but I believe they were --> 1.052 - 1.010

I purchased the kit from Austin Homebrew Supply, I have been very happy with thier kits.
 
The orange peel and corriander were added to the boil for the last 15 minutes then I removed them with a spoon before transferring to my fermentation bucket. I got confused because the instructions did not say to leave them in there so I played it safe and pulled them out.
