Wiring an xlr pt100 to Inkbird ipb-16s

It's been a while since I last posted but I've got a question I can't seem to find an answer to!

I just bought an Inkbird IPB-16S but I'm wanting to upgrade the temperature probe with a PT100 using XLR connections out of the project box.

the Inkbird currently has an 1/8th inch jack temp probe that is wired with only two wired described as NTC and Ground. Do I wire it so that both of the red wires contact the NTC side of the Board and the single Blue wire contacts the Ground?

You can't swap an NTC thermistor probe out and replace it with a PT100 unless the PID has multi probe capability. Doesn't look like the IPB-16S has the required capability.
