what do ya thing of using a Belgian strong yeast in a wine? the wife wants a mild wine and I already have to Belgian strong yeast.

Idk about the Belgian strong yeast, but I used to use brewer's yeast to make sparkling wines. I'd let it ferment till it was slowing down pretty good. Say,85% or so. Then bottle it & let it sit 1 year. Carbonation like Champagne or Asti.
