Will this recipe make a good dunkel wiezen?

The LBS had some stuff on discount (going out of business). I have never used Muntons in a can before.

Would this make a good dunkel wiezen?



6.6 lbs Muntons Wheat LME (2 cans)

2 lbs Munich malt (dark)

1.5 oz. Hallertau AA 4.5%

Wyeast 3068 Weihenstephan




mash wheat for 30 - 60 min at 155 Degrees in 1.5 gal water

sparge wheat for 10 min at 170 degrees in 2 gal water

mix mash and sparge water

Bring to boil add 3.3lbs LME

Add 1 oz Hops 60 min

30 min add 3.3 lbs LME and .5 oz hops

After cooling wort add water to equal 5 gallons
 
You need some caramel malt and like Conroe mentioned Carafa (Special)II. You can use chocolate malt though not exactly to style. I prefer chocolate rye as it is a huskless malt like Carafa Special.

You mention mashing wheat but believe you mean Munich.
 
Looks very good for a hefeweizen. Add 2-4 oz carafa II (or chocolate malt) to it to put it into the guidelines for a dunkelweizen.
