So I brewed this beer last Sunday, 1/4/15.

OG was 1056. Hydrated the dry yeast, added nutrient (first time I tried this) pitched at 72 deg at 4PM, and put in my bathtub in a bucket of cool water. By morning in was percolating away, and days 2 and 3 were very vigorous ferments. Temps were 64 to 68. Then day 4 ferment slowed and temp dropped to 61. This morning (day 5) I took it out of the water. Temp returned to 63-64, and there wasn't much bubbling from the blow off tube, so I decided to take a reading. It's already down to 1010, And it tasted pretty damn good!

So my plan is 9 more days to clean up, then bottle it next Sunday night. I'd do it Saturday morning, but I'll be out of town. I'll probably drop in the dry hops Sunday this weekend.

So based n these facts, What do you think about my chances of having good tasting, carbonated beer by Feb 1?

You will probably be okay but I think you are pushing it a bit. Just be sure to check your FG before you bottle so that you don't create bottle bombs. It usually takes at two weeks for bottles to carb up but I have seen them carb faster at times.
 
if its at 1010 for 3 days, dry hop it right now for up to 7 days and then bottle for 2 weeks. your beer will be plenty carbed if you have it in a warmer area( around 68-72).
