So I wake up in the morning and I see this from my starter.

I know in fact that I will have enough yeast. I actually only needed the first growler, and for some reason I made two. I figure that somebody will get a good kick out of the activity from the starters

By the way you are going to get more growth if you use sanitized foil instead of an airlock. Yeast need O2 to grow.

What are you pitching those beasts into?

It will be going into a belgian dark strong ale

I know that it should be covered with foil and on a stir plate but I swirl it up about every hour for the first few hours. I also use an oxygen diffusion stone for about a minute when I first pitch and then try to repeat an oxygen addition after a swirl (after I dissipate the newly formed CO2) probably twice for up to a minute, but usually stop when the foam reaches the top.
