My beer has been in the primary for 7 days; I brewed a strong ale, so the yeast is still in suspension. As of today, I'm noticing a hint of the medicinal phenols (band-aid); nothing strong--but can detect just a bit. I removed a few ounces of the beer and refrigerated it to see if the flavor changes, and I noticed that the smell/taste decreased significantly--practically gone completely. So, my question is: Are the medicinal phenolics I'm barely smelling just due to the fact that the yeast is still heavily in suspension? Will this subside if I cold-condition in a secondary for a week or so? I use Star San, but I think my sparge water may have been a bit high (also, my tap water may have undetectable traces of chlorine).

Any thoughts?
 
as far as i know strong ales benifit from some aging....i brew with tap water from a garden hose and ive had no problems to date. If your confident in your sanitiation then relax and wait it out. Aging usuallly heals alot of problems with beer. PLus theres not really anything you can do at this point. Let it run its course. What temp did you ferment at and what type of yeast did you use? Better yet just post the recipe
 
I brewed an english strong ale with plenty of caramel malts. Also, I used the irish ale strain from white labs. I am confident that it is quite young.
 
With a beer as big as a strong ale and only 7 days after you pitched, there's going to be lots of funky, discordant flavors going on in there. Let those yeastie-beasties clean up after themselves.
 
If the yeast is still in suspension, I'd let it be and, like the beagle says, give the yeast the chance to clean up after themselves. If you move it too quickly to a crash-cool environment the yeast will go dormant and you run the risk of preserving the off-flavors rather than clearing them.

IIWY, I'd make sure your hose is safe for drinking water. Otherwise, it'll leech bad chemicals into your beer. When I went in search of them at Lowes, there were 2 kinds that were safe for drinking water: the white RV water hoses, and the spiral-springy green ones. You may not have any noticeable problems with beer flavor, but you never know what kind of PCB's or whatever are going into your beer water.

You shouldn't even be thinking about your beer at 7 days old.

But seriously...keep notes...smells looks...all of that. Then you compare and compare and compare...sooner or later you'll RDWHAHB for about 14 or 21 days...then Let that big Ol beer alone for sum-more time.

I am confident that it is quite young.
7 days is barely even born. Quite Young. Please post back here in a few weeks when you bottle...just so everyone can see that it really is gouda!

They all said it....You can't judge a beer til it's been carbed and conditioned a minimum of 3 weeks....anything prior to that will be green, and not a true representation of your beer...

In other words, what you think might be phenols now, are probably just a byproduct of fermentation, which the yeast may very well clean up....

its a consumption safe hose but i had to check. good thinking. Next of many purchases are gonna be an rv type filter hookup for the hose but im glad someone else is concerned about my health
