I started with a gallon of clear apple juice with no preservatives and it became very cloudy one day after fermentation began, and has not cleared at all after fermenting one week. This surprised me. I did not expect it to become opaque by using clear juice.

Is the cloudiness from pectin or from the yeast?

Thank you, I will put it some place out of sight and forget it for a month.

A little cloudy is OK, this went from crystal to mud in 24 hours.

Don't worry about clarity when fermenting, even if it looks like mud. The yeast like to swim around to get their food, so even if you could somehow pour unfermented apple juice on top of a yeast cake without disturbing it, the yeast will still swim around on their own and help themselves to the buffet.
