Who in the heck cares about how much head a beer has, and how long it lasts??

I've only been brewing 4-5 years, I always feel a little more proud of my tasty brews that have a long lasting thick head of fine bubbles that lace the glass. As someone above mentioned, in competition head and head retention counts.

It depends on the style for me. A darker beer or stout I prefer a foam layer that would last til the end. A pilsner or lighter beers doesn't need much just carbed til the end. So I can't vote yay or nay.
 
I spent some time in the Netherlands back in the 90's. I was really impressed by the care with which they served every beer. For example, the beer was ALWAYS in a matching logo'd glass, with a matching coaster. If you changed the beer, they would change the coaster and glass to match.

But the truly unique thing was their care of the beer head. The beer level was always at the middle of the glass's logo, and the foam was always scraped to leave the foam flat at the rim.

The purpose of the foam, besides the obvious aesthetics, is to leave a protective CO2 blanket on the beer to protect it from the effects of O2. It's mentioned in this video.


Thanks for the info. I supposed I can get behind it “protecting” the beer, or being a direct correlation to the quality of the beer. However, I think I will always be annoyed when a foam mustache is the collateral requirement for drinking a beer.
Speaking of having good technique, I’ll never forget the time I ordered a bottle of China’s at a restaurant and the server left my glass on the table and poured the beer like it was a bottle of water. That’s a bad reason for foam!

haha, I cleaned it up for you.

I'm not really buying the "protect the beer from O2" comment by the guy in the video. I drink it pretty quickly :) I also don't ever want as much foam as Die showed above, though that was impressive - it looked like meringue. But I do like a little, and especially like it when it sticks around for a while.
