Has anyone use this yeast? I picked up a vial yesterday and plan to brew this Sunday. I'm planning on making a starter and pitching around 65-68° f hold at that temperature for first 2-3 days then free rise up to 75° for rest of fermentation. I couldn't find any thread on this yeast. If anyone has use this yeast please share your experiences. Thanks.

Never tried it but it would be a worthwhile experiment to split the batch and hold one at 65-68 until its done and let the other free rise after3 days in whatever ambient temperature you have and compare the difference

I'm interested to know if it's as dry as 3711 or whether it behaves like the actual Thiriez yeast and leaves a bit more behind. Does anyone know?

WL 590 on the stir plate last night. Brewing a Saison today. We will see how the yeast goes.
