Yesterday I brewed an extract Saison. I have always used Irish Moss. Another brewer recommended Whirlfloc. I used one tablet per label instructions at last 15 minutes of boil. Today, I have blobs of protein floating in my carboy. Its not what I want to see. Can it be filtered out? will cold crashing send it to the bottom before racking?, or should I dump it out and write it off as a lesson learned.

Those blobs of protein are a good thing, the protein has coagulated and is now going to be out of your finished product. It will definitely settle with cold crashing. DO NOT DUMP

It's only been a day. Those blobs should sink eventually. Just give it time. Especially with Saison yeast, you're going to get blobby junk in it. I have made a few Saisons, and there was always gunk floating around for at least a week. Don't worry about cold crashing until you're sure fermentation is complete.

I glad to know the protein blobs are a good thing. The sight of seeing this stuff after brewing was a bit shocking. And as you can tell I'm new to brewing. thanks again

This was my first attempt brewing a Saison. And you are right on, there is gunky stuff mixed with the blobs. I will keep it fermenting for at least 20 days or until the yeast has done its job. Thanks for the info.
