So this is my first batch in my new add Brewtech Unitank and my first lager. Right now I’m in the second day of my diacetyl rest and fermentation appears to be done. At what point can I dump the yeast and trub? I know it’s a little different for a lager than an ale so figured I’d ask the question. Any help is appreciated!

As soon as you have any in the cone. There is really no point in keeping yeast in the fermenter any longer once it's settled, regardless of whether it's an ale or a lager.

I do a trub dump when fermentation begins to slow. That way I can get a gravity reading & determine if it is time to rack to kegs and spund.

I've found the timing on this is about the same as when I would want to do a D rest, when fermentation has slowed, but still active, so I do that in kegs while spunding. Usually works out just right, and easy to control temperature in kegs.

For unitank it depends on how you're going to carbonate. Are you going to carbonate in the unitank. Assuming you are, dump just before adding pressure. Have you already used natualt carbonation or spunding? If so, I wouldn't try to save that yeast. As soon as it hits an unpressurized environment, CO2 will quickly release and can damage yeast cell walls.

So for me, in all cases, ales and lagers included, I harvest just before starting carbonation. After at least 2 days cold crashing.
