I'm trying to formulate a recipe for wheatwine and am not sure quite where to begin. Does anyone have any suggestions or a good recipe for wheatwine?

The new-ish book Brewing with Wheat has a short chapter on them and a couple recipes. I've never brewed one (or even had one I really enjoyed), so I won't hand out any advice. Good luck.

Harpoon has made a few versions over the years. Their latest is called Triticus - it is a "remake" of one of their older 100 Barrel Series editions. I really like it - it is darker than most would think a wheat wine "should" be, but worth checking out if you can get it.

I have not brewed a wheat wine, but did a little searching for a Triticus recipe and found a fair amount of good info online - I think there is a blog out there that recounts the original recipe formulation for the 100 Barrel Series. FWIW, here's my idea for a homebrew version of that recipe. I'm not 100% sure about the late and dry-hop amounts. Might need more dryhop. Anyways, it's at least a place to start (please note again that I have not brewed this...yet):

Thanks for the replies. I guess I jwas mostly wondering approximately what percentage of the grain bill should (or could) be wheat. From what I've gathered, it looks like somewhere between 40 and 50%.
