Hi there, any recommendations for this wheat recipe? I took parts from a bunch of recipes I saw. I want a bit more than an american wheat but not the full on Belgian wheat. Comments welcome!

Makes 5 Gallons

Pale Ale Malt - 5.5 pounds 55%
Canadian Wheat - 4.5 pounds 45%

0.5oz Cascade - 60min
0.5oz Saaz - 60min
1oz Saaz - 10min
0.5oz Sweet Orange Peel - 5min
0.4oz Coriander - 5min
0.1oz Irish Moss - 10min

Wyeast 3944 Belgian Witbier

Strike - 152F 60min
Sparge - 170F
 
That'll taste very Belgian. For a more American version, do one or more (or even all but probably not) of the following:

- Use a clean-fermenting American ale yeast such as WLP001. (This alone gets you into something more akin to Blue Moon territory - Belgian-inspired, but not Belgian.)
- Use American hops instead of continental.
- Drop the spices, optionally replacing them with a touch more late hopping.
- Add a touch of a lighter crystal malt to reduce the attenuation a little.
 
Shoot, I bought my wyeast yesterday.
I will drop the spices for sure. I was reconsidering those today actually.
Which hops would you recommend? I haven't bought those yet.
