Does the wort become more acidic as it ferments ?

Should I measure and adjust it, using either precipitated chalk or citric acid as it ferments ?

What should the PH be after, say, 1 week ?

You can measure it if you want to see were it's at. I would not do anything to adjust it. The ph will drop during fermentation. Beer is more acidic than wort.

Ph is important during the mash. You can use different malts or things like 5.2 buffer to adjust mash ph.
