Hello Im brewing a DIPA, the recipe calls for pacman yeast. Here in Mexico I dont have access to that yeast. I have the following:

WLP002
Safale us-05
Safale s-04

I like DIPAs that are not so dry, with a hint of caramel in the back. wich one do you recomend?

the grainbill is:
14 lbs 2-row
1 lb Caramel 40L

Thanks

Changing to 60L Cara Malt, more intense caramel flavor.

Any of those yeasts should be fine, but you want a good yeast that produces a crisp, clean West Coast neutral flavor that lets the hops and malt shine through, go for the Safale S-05 or WLP001. The English yeasts can produce some unwanted fruity characteristics (depends if you like those flavors), especially if fermented at higher temperatures. Nottingham might also be a good choice.

For what you have I think the S-05 is your best choice for a clean fermenting yeast which is usually where you want to go with an DIPA.
