I have 3 pounds of orange blossom honey. What should I make? I brew all grain and I plan on ordering the ingredients next week. So anyone with suggestions as to what I should make, let me know! Thanks!
 
Honey wheat is a personal favorite. Just brewed a pineapple honey wheat last month.
 
A dry Imperial IPA with 10-15% honey and a load of late addition hops / dryhops.
 
So this is what I have come up with. Please critique!

Honey wheat

Batch size: 5.5 gal
Boil volume: 7.0 gal
OG: 1.055
FG: 1.014
Bitterness (IBU): 18.1
Color (SRM): 5.4
ABV: 5.4%

[Grains]
Two-row (US) 4.000lb Grain 36.4%
Wheat (US) 4.000lb Grain 36.4%
Honey 1.500lb Sugar 13.6%
Honey Malt (Canadian) 1.000lb Grain 9.1%
Rice Hulls 0.500lb Grain 4.5%

[Hops]
Willamette 0.50oz 6.0% AA Pellet @ 60 min, 10.0 IBU
Willamette 0.50oz 6.0% AA Pellet @ 20 min, 6.1 IBU
Willamette 0.50oz 6.0% AA Pellet @ 5 min, 2.0 IBU
Willamette 0.50oz 6.0% AA Pellet @ 0 min, 0.0 IBU

[Yeast/Other]
Irish Moss 1.0 unit(s), Fining
Safale US-04 1.0 unit(s), Yeast

[Recipe Notes]
Mash at 152 for 1 hour. Attain 7 gallons pre boil volume.
Yeast nutrient at 10
Ferment at recommended temps for 10 days and bottle, possibly keg.

A little bit of honey malt goes a long way. I just used it for the first time and 1/2 lb was almost too much in a 1.094 iipa. And that's with 15 oz of citra simcoe and Amarillo!

Strong stuff
 
Ok. I changed the honey malt to half a pound. Should I add some more hops to the boil? Maybe up it to an ounce at 5 and an ounce at flameout?
