WTF is sodium carboxymethylcellulose gonna do? emulsifier/thickener is no concern, but "bulk laxative" sounds bad.....

I’m guessing in this application it’s an emulsifier...but that’s just a guess
 
cellulose is what makes up the cell walls of plants. It's basically fiber.
I'm guessing that stuff is in there to thicken it.
 
Wikipedia articles are usually good at telling you what the different uses are for such things.... in this case look in the Culinary uses section.
