Have 8oz of Zythos, 6oz of Simcoe and 5oz of Cascade what should I make?

Double IPA...especially with that amount of hops (with some to spare).

as a sort of an aside, i used 1oz zythos and 1oz sorachi in the dry hop of a pale wheat and it came out AWESOME
you definitely have the hops for a tasty ipa (which is what i would go for over a DIPA)
