I am planning a Saison https://www.homebrewtalk.com/f71/cottage-house-saison-254684/ for my next brew, but the yeast won't be here until next week. As it turns out, I will have a chance to brew tomorrow... so, I'll need to brew with the ingredients that I have on hand. Its a rainy day today so I'm inside on the computer and I thought I'd see what others think?!

Currently on tap are: centennial blonde, a mild APA and a hoppy APA. just kicked a brown ale.
This is what I have on hand:
50# 2row
1/2# crystal 10
1/2# crystal 20
1/4# crystal 40
1/2# chocolate malt
1# honey malt
1-3/4# victory
1/2# vienna
1# white wheat
Amarillo 3.75oz
cascade 1.5oz
centennial 2.25oz
citra 6.5oz
simcoe 15.25 oz
sorachi 3.5 oz
tettnang 4oz

only yeast right now is so5

Ideas?!?!

I would say( im not to good with lb and oz) about 7lb of 2 row, one lb wheat malt and a half lb mix of your crystals with a little chocolate. Add about 1/2 lb of soft brown sugar in the boil.
Bitter with an oz of tettnang and hop the crap out of ot at 15,10,5 & 1 with citra and amarillo( 3/4 oz pf each at each addition).
Looks good to me.
