What should I brew on fathers day?

I brew a lot of pale ales, amber ales, blonde ales and IPA's.....not sure what to make on Fathers day but I like to brew myself up something awesome. Any ideas for something out of the ordinary and different would sure be appreciated. I have the following ingredients:

Malts

Pale Ale Malt
Munich 10L
C20
C40
C80
Special B
Bisuit
Chocolate
Black Malt
Roasted Barley

Yeast

WLP200 (Morebeer WLP001 and WLP002 blend)
Wyeast 3724 Belgian Saison
Bells Yeast Strain
Wyeast 1098 dry English
Wyeast 1187 Ringwood

Hops

Chinook
simcoe
cascade
tettnanger
Columbus
Willamette
Summit
Legacy
Belma
Sorachi Ace
 
Stout:
Pale, munich, biscuit, chocolate, and some roasted barley, mid temp mash, chinook FWH, a little simcoe aroma addition, and fermented with 1098 or ringwood
 
Man, if you had some wheat malt I'd do an American wheat with Belma hops... Mmmmmm!
