Hi All,
I have a sour stout that has been in the primary carboy for about 7 months that was pitched with Wyeast Rosealare. I am about to bottle and I fear that there are not enough live yeast to bottle condition. I could of course add more Rosealare for bottling but was thinking I could add other yeast to do the conditioning. It so happens I am brewing today and have White Labs Belgian Ale Yeast (WL550) that I started yesterday and if it would be good idea to just use a cup of that. Ideas?
