I have a ton of Galaxy and Nelson I have to use up before they go stale so figured I'd just do a mainly 2 hop IPA with a real simple malt profile, hoping to get tons of stone fruit hop flavors.
 
In my experience, Galaxy is really easy to drown out with other hops. Pairing it up with something as potent as Nelson, I would imagine, would amplify that. If it was me, I'd change it up to at least a 2:1 or 3:1 Galaxy to Nelson ratio.

Other than that, it looks good.

Another note. From what I recall reading about that yeast (the 'Conan' strain), underpitching (say .5 as opposed to .75 mil per ml/deg plato) can bring out more peachy esters, which would help on the stone fruit end. It may be worthwhile to look into that a little bit. I don't recall where I read that, but it came to mind when reading your post.

This keeps the IBU's at around 69 still and gets closer to a 2:1 / 3:1 ratio on the hops:

I actually quite like the look of this.
both galaxy and sauvin are potent hops.
the only thing i would change, is swap amount of the 15min and 0 min so you have 1.25 ox of each at 0
and 1oz at 10 (Change it to 10 mins)
and give it a good old whirlpool.

the only othe thingi would suggest is to pair with something like centennial as a flavour/layering hop (a small addition will do) and get some depth behind it.
but hey just my 2 cents.
 
Came home and checked in the freezer and it turns out I have less Galaxy than I thought. I've heard Citra and Galaxy pair well and are similar in profile so I swapped in Citra to make up the difference keeping the roughly 2:1 / 3:1 ratio of Galaxy/Citra to Nelson.

When I first entered Galaxy into BeerTools I was going off a recipe on the Electric Brewery website that listed NZ Galaxy as one of the hops, never bothered updating it.
 
A quick update. This was easily my favorite beer I've ever brewed. The updated recipe is below.

Super juicy, stone fruit and citrus, lots of Nelson wine grape flavor, a really nice mouthfeel and hop aroma that won't quit.
