I had the oversized shrimp cocktail for dinner, and I made shrimp scampi over spaghetti for hubby. Then we both had pumpkin pie with “some” whipped cream… whipping cream by hand was my gym today.
 
That damn Showtime Rotisserie is going to find a new home. We've owned 5 of them over the years; bought this one earlier this year to replace the last one which finally gave up. For some reason, this one rotates MUCH more slowly and it was already starting to cremate that roast 30 minutes in! So the roast came out and went into the oven with a foil tent over the browned parts and finished cooking in there. It was delicious but we were disappointed with that stupid rotisserie. Out it goes!

Honestly one of our favorite kitchen appliances : )

We used to borrow a monster one that a friend had, but it broke, so we found some older one on Craigslist about 5-6-8 years ago. It's smaller, holds a chicken only (the other one could manage a large turkey), but it's been rock solid : )

I use this springy one which, to me, is better than a standard whisk if I'm going to get all crazy and make whipped cream by hand. I do foam my milk with it every morning but whipping cream is another animal. I happily dirty the stand mixer when making whipped cream.
Whipped cream is the best, super easy (depending) to make and so much better than bought.
Food looks nice. I might make an alfredo/pesto type of sauce for pasta on the 31st, featuring grilled chicken.

Even with making a small amount by hand, the volume was a little too much and my stand mixer would make a boat load… wait, is there such a thing as too much freshly made whipped cream?

No, no, no. Whipped cream has almost ZERO carbs so it's "free" junk food. I use the leftovers in my Moka pot coffee.
Seriously, I'll get tired of it after a couple days since it's so rich but on pumpkin pie--yikes, so delicious. As far as amounts go, I wonder how small of a batch I could make in the stand mixer (Kitchen Aid)? Normally, I just pour, add sugar and a bit of vanilla so I'm not sure what my batch size is. I could always try like a 1/3-1/2 C of heavy cream and see if it works out. Problem is I buy that 1/2 gallon from Costco and I tend to try to use it up.
I'm barley-challenged--should learn about it and use it more since my wife likes that kind of stuff.
Soup looks spot-on.

Well, I believe you--you're alive. That was me trying to be funny (I told my wife I would be obvious).
Being a city person, it's still impressive. I would still be hesitant since I don't know anything about mushrooms.
If I may, what are the most flavorful mushrooms in the grocery store/fruit market?

I live downtown myself ;) I drive out to the woods, 23mi each way.

I'm sure after an hour on Google you'd learn enough to know what grows in your area, and when. Then go for one that don't have poisonous lookalikes...or at least ones that are very indistinguishable.

Instead of buying them, hop on Amazon and search for "mushroom grow kit" for an inexpensive way to grow your own. It's quite fun! The 'Back to the Roots' kits are good...do it and post some photos :)

Otherwise, look for oysters, lions mane, chanterelle, trumpets, ...anything that's not cheap, basically.

What you said makes sense. I like the grow-kit idea. I also really liked growing bean sprouts in the house so we'll try the mushrooms (not Amazon).
Mushrooms and doing electrical around the house are surprisingly similar--people say it's safe/easy but I am still reluctant.
I appreciate the advice on store-bought too. Thanks.

That's just awesome. Someday I am going to figure out if there is any place around north Texas to forage mushrooms, or I will just grow them. I love oysters.

You can buy the Back to the Roots kits pretty cheap : )

Look for areas that are sloped, wet, and get regular annual rainfall (trees are obviously important, too).
 
Since "buying seeds" and whatnot was mentioned, I'm getting ads that sell micro greens and things like that. I might be far behind the curve but it seems that using Google Chrome allows advertisers access to whatever we talk about.
 
I have gorgeous short ribs of Piedmontese beef in the oven, smells good in here! I just cleaned and floreted a huge head of cauliflower, have it ready to micro-steam. Then it gets tossed in EVOO heated up in a skillet with chopped garlic and Spanish sweet smoked paprika. Looks yummy, watched a guy on YouTube fix it yesterday. Hope it's good! Will try to remember to take a photo...no promises though....

Not a fan of steamed Green Cabbage on New Year's Dat, but apparently have to eat some of it anyway. So in addition to green cabbage, I made Rotkohl today to go with the green stuff tomorrow and it is just AMAZING!!! Never made it before, but I love Polish and German food. It honestly is phenomenally good!!

I've been turning that stuff off as much as possible.
I'm sure that's what it is--from Googling. That makes me a little happier. I must have forgotten I Googled it.
I would be using Firefox but this page didn't want to load or something like that.
 
I know this is not something I made but I had Taco Bell for the first time in a few years. It was good since I special-ordered everything. Food coma. Staying in anyway, watching football and listening to the gunfire.
 
Well as usual I forgot about taking a picture as soon as my plate was filled up! It was easily the BEST plate of short ribs I've ever made/eaten. Tender and so flavorful. The cauliflower wasn't all that however, certainly the juice was not worth the squeeze. Not sure yet what I'll do with the leftover, may just put it into the air fryer til it gets crispied up. We shall see.

Damn it Boy ! I have my moments and this is one of them. Spiral cut brown sugar honey ham. Glazed and slow roasted with brown sugar, honey, pineapple, Montmoracy cherries and clove. My son is a licensed chef/sous chef and even he is impressed. Happy New Year !View attachment 754237
