Chinese sausage baked Buns...some look better than others, but from experience, they'll all taste good!

Pork loin marinated in soy, ginger, sambal oelek, garlic, zest and juice of 1 orange and scallion. This is the best pork I've ever made in the oven my wife and daughter were fortunate that I even shared it with them.
About to come off the grill! I love this sauce/marinade recipe. I tried a bunch of them before I found this recipe. It's a clone of the British chain Nando's and it's very close indeed!

That looks awesome... I actually found a bottle of Nando's sauce a couple months ago. It had really good flavor, just needed a bit more spice to it.

Nando's has Medium, Hot, Extra Hot, and Extra Extra Hot sauces, along with a bunch of other variations. At the restaurants I would usually get medium and not hot I think, which was pretty hot, or maybe I was getting hot and not extra hot. Regardless it was plenty hot.
I have used all kinds of dried chilies before, and always include some dried Kashmiri chili powder, and always include some fresh chilies. 5 Fresnos and 3 Habaneros was perfect for the doubled recipe. This time I used 5 Fresnos and 3 Serranos and it was a little tame, but my wife thought it was perfect. What Nando's does, is they marinade and precook in a fairly mild peri peri sauce, then we you order they put sauce at the heat level you request and finish cooking it, which is probably what I should do (I should marinade with a mild sauce, then cook with a mild sauce for some chicken and a hot sauce for other.)
My son's Boy Scout troop is doing winter camp next weekend. Today we went shopping for the food and then made four gallons of chili that will be Saturday nights dinner. A lot of effort, but smells great - and not too much whining from my son.

Those aren't the ones you steam, right? Did you make your own sausage? I'm getting a meat grinder attachment for my mixer and thought about making sausage.
It was really good, next time though I'll cook it a little less. I forgot how quick tuna cooks, it was just a bit drier than I like. Other than that this has been the most satisfying meal I've had in a long time lol. Especially since the whole thing cost less than $2.

Mmm... Sounds good. Never been an umeboshi fan, and give or take on natto, depending on the amount of hot sauce available. Still would dig into the dish!
