Chinese sausage baked Buns...some look better than others, but from experience, they'll all taste good!

About to come off the grill! I love this sauce/marinade recipe. I tried a bunch of them before I found this recipe. It's a clone of the British chain Nando's and it's very close indeed!

That looks awesome... I actually found a bottle of Nando's sauce a couple months ago. It had really good flavor, just needed a bit more spice to it.
 
Made a plan to smoke some baby backs, and in the morning I went over to our winter farmer's market to get stuff to go with it. I grabbed some nice beets and these funky multi-colored carrots and grilled them on the kettle grill.

Then a potato farmer had this mix of all sorts of little potatoes - white and yellow fingerlings, blue ones, purple ones, red ones, etc. He suggested steaming them until almost done, then tossing in oil and salt and finishing them off in a 375 oven. But how to steam a ton of potatoes? Then it hit me - I propped my false bottom up on a couple wads of aluminum foil in the bottom of a big kettle, and, voila, a giant steamer basket. Everything turned out great.

Nando's has Medium, Hot, Extra Hot, and Extra Extra Hot sauces, along with a bunch of other variations. At the restaurants I would usually get medium and not hot I think, which was pretty hot, or maybe I was getting hot and not extra hot. Regardless it was plenty hot.

I have used all kinds of dried chilies before, and always include some dried Kashmiri chili powder, and always include some fresh chilies. 5 Fresnos and 3 Habaneros was perfect for the doubled recipe. This time I used 5 Fresnos and 3 Serranos and it was a little tame, but my wife thought it was perfect. What Nando's does, is they marinade and precook in a fairly mild peri peri sauce, then we you order they put sauce at the heat level you request and finish cooking it, which is probably what I should do (I should marinade with a mild sauce, then cook with a mild sauce for some chicken and a hot sauce for other.)

You're making me hungry xD I was just at TJ Maxx buying workout clothes and I was hoping they would have a bottle or 2 of that sauce again, I got a bunch of chicken thighs to cook and that sauce sounds good. I just started working out again recently and my metabolism just kicked into high gear recently and all I want to do is eat everything xD this thread is a major tease for me.
 
My son's Boy Scout troop is doing winter camp next weekend. Today we went shopping for the food and then made four gallons of chili that will be Saturday nights dinner. A lot of effort, but smells great - and not too much whining from my son.

Also he should be more careful with his knife, scratched his ear pretty good:p

Those aren't the ones you steam, right? Did you make your own sausage? I'm getting a meat grinder attachment for my mixer and thought about making sausage.
 
I'm torturing myself looking at this thread. I woke up early and can't go back to sleep and I'm stuck between getting up and making breakfast and staying in bed xD my stomach is quickly convincing me to make breakfast at 3:30am

I didn't make the sausage...DiLuigi from Harris Teeter. I couldn't find my steamer baskets...been awhile. Probably buried in the storage unit. So these are baked...but turned out really well. I would probably have to use a different dough for steamed, but would like to try it. Baskets are about $16.00 for a set of 2 or 3 at Asian market for the size I would use.

Monday coffee. Daughter sick again...wonder how much of it is 8th grade drama and a boy vs. sick, but going to doc later anyway. And dragging along the grandson. Great start.
 
It was really good, next time though I'll cook it a little less. I forgot how quick tuna cooks, it was just a bit drier than I like. Other than that this has been the most satisfying meal I've had in a long time lol. Especially since the whole thing cost less than $2.


Where did you buy (or 'find'?) tuna for so cheap?
 
Lazy Sunday lunch..

Japanese udon in a broth with natto (Japanese fermented beans), okra, Umeboshi (Japanese sour plum) paste and onsen-style egg.

Dark saison on the side.

Mmm... Sounds good. Never been an umeboshi fan, and give or take on natto, depending on the amount of hot sauce available. Still would dig into the dish!
 
@mcbaumannerb - your son is a cutie!! Now if you can get him to do dishes too - I may have a job for him. :D

Thanks - luckily for him he doesn't get his look from me. As for dishes - he can load a dishwasher, but I don't trust him to wash anything yet (at least, not if there's a chance I'll be using it!)

It was in sale at Kroger for $2.99 a pound, I figured I couldn't go wrong. It looked decent so I bought 2 steaks. I would have bought more but it's just me and they only had about 4 days 'til the sell by date.

Fully agree, umeboshi is quite an "acquired taste" condiment; not being Japanese, I am still getting fully used to it myself. :mug:
 
We had a cold snap yesterday that just ruined out premature spring weather. The front that came through yesterday evening was packing rain and 45 mph winds out of the north. So of course I cooked outside! :)

Chili, and for the purists note that there are no beans this time!
