BTW finished that Ham and corn chowder last night. Skimmed the cold butter off the top and made a Roux and added back to the soup before adding the cream.

Also made up a split pea with ham hock and a few leftover potatoes from the chowder, some thinly sliced carrot, and of course the onions sweated. Turned out real nice, but too much stock. Added enough to cover the hock, which left too few peas. Still tasted good, but not quite as thick with peas as I like.

Filled a mason jar of each to take to my daughter in college.

Batchen it for the weekend and didn't feel like cooking.. BEER was a better dinner choice..LOL But a guy has to eat ya know. Who said frozen burritos couldn't be GREAT..
Jalapeno peppers, Swiss cheese with Mexican chilli powder, sour cream and home made salsa. Ohh yeah a couple of frozen burritos are buried under there too..LOL

Cheers
Jay

Jaybird, love the combo of frozen food & great additions (including beer)! Sounds like a great dinner!

Dixon9717, that chili looks SO GOOD.

Uh, thanks anyway - I don't think my laptop could stand the strain! :D

Just as well, I really don't have any. My computer would commit hari kari if I tried it.

Went to the Big E yesterday and walked around all day eating all sorts of disgusting to think about but extremely tasty deep fried treats. I fully expect to have an MI by midafternoon.

Not feeling up to cooking today. I have everything prepped for crab apple jelly...just can't do it. Supposed to brew tomorrow. Hoping a nap will help...and hopefully a good night's sleep. But that's unlikely...kids having friends over to spend the night. Ugh.

I'm gonna brew for two then, for you and me. I'm doing 30g of a pale ale, and smoking 3 pork butts and 2 briskets and some pork short ribs. Early early AM.

30 gallons?! Wow...and all that meat! Yowza! Nap helped my situation and having a little beer to sanitize the my system, while watching NC State football.

Tri tip soaking in a marinade of soy, garlic, lemon, sugar, garlic, onion, pepper, and paprika.

I'll smoke it tonight, so I probably will post the pics in the other thread. :p
