Happy Bastille Day. Today I'm cooking a traditional French 14th of July meal for my wife and I. It's a weird day, everyone in the family is out of town or working. I went to the village hall for their annual fete, one brother in law and I were the sole family reps. In the olden times the family dominated the village. My father in law was mayor for 16 years, the 11 kids and their families were everywhere. Anyway, here's my tribute to tradition. Green chile cheeseburgers and fries.

make mixed fermentation 😉waffles. The darker color comes from a portion of buckwheat flour, and there’s sourdough discard and a few ounces of butter milk that was in the fridge. Tasty and they probably won’t be made that way again.
 
Mmmmm, root beer ice cream! Recipe please?

I made keto vanilla ice cream in my Cuisinart 2 quart ice cream maker yesterday. I've had that thing over 6 years, I bet I've easily made more than 100 batches of ice cream, and it just keeps goin' on strong!

I made keto vanilla ice cream in my Cuisinart 2 quart ice cream maker yesterday. I've had that thing over 6 years, I bet I've easily made more than 100 batches of ice cream, and it just keeps goin' on strong!

Sure! I also have a Cuisinart ice cream maker but I actually haven't used it in years. I could easily eat a big bowl if ice cream every day, but I've learned that's not a great idea. Nowadays I only eat about a half dozen servings of ice cream a year.

I recently watched a yt video where a guy made easy, no-churn ice cream, so I thought I'd give it a try. Why root beer ice cream? In the small town I grew up in there was an ice cream shop that made, hands down, the best ice cream I have ever tasted, even to this day. At its peak he had 105 flavors on his menu. @doug293cz may remember it. His root beer ice cream was one of my absolute favorites. I wanted to try and recapture the taste from my youth.

No churn root beer ice cream
3 cups whipping cream
1 14oz can condensed milk
4 TBS Shank's root beer extract *

Whisk the whipping cream (Kitchenaid mixer with whisk attachment works great), until cream begins to thicken slightly. Add the condensed milk and extract and continue whipping until thickened. Stop before peaks form!! Turn it into a container and freeze. Quick and simple.

Recipe can be adapted for any flavor.

*Years ago I made this with my Cuisinart using McCormick's RB concentrate which was better than Shank's, but unfortunately McCormick's no longer makes RB concentrate.

You talkin' about Pat Mitchell's in Endicott, NY? Yes, I remember it well. I agree about best ice cream ever. I was particularly fond of their cantaloupe ice cream. One of the iconic local experiences was to get ice cream and then sit on the cemetery wall next door eating the ice cream and people watching.

Yes indeed Doug!! Pat Mitchell's. Not only his cones and dishes of ice cream, his banana splits were epic!! My friends used to mock me for getting vanilla ice cream. "100 flavors and you get vanilla?!?!" But it was so damn good.
 
LOL at you two! Sounds divine. My husband asks me to make vanilla. I'm like - but WHY? HA HA!

I'll have to see if I can come up with some of that root beer extract. Thank you!

(vanilla is actually good, if you put something else on it - last night I added a dash of SF pancake syrup. Good!)

I bought a 4oz bottle of Shank's RB extract on Amazon. I think it was like 7 or 8 dollars.

Tried the ice cream tonight. Advice - look for a different extract or concentrate. I didn't care for Shank's extract at all. Way too artificial flavor.
This one's a dumper.

Watkins is actually the brand that I bought first. I felt the flavor was better than Shank's, but it is a clear extract. I was looking for something with the same flavor but also with a light brown color, in an attempt to replicate the root beer ice cream experience I used to enjoy. I'll keep trying trying to find the perfect extract, but if I can't find anything better I know Watkins can work.

*I served a bowl of the Watkins flavored root beer ice cream to a friend, and he said it reminded him of a root beer float.
 
Good to know you've tried/liked the Watkins, BY. I'll have to come up with some "brown" - maybe a dash of browned butter? Not sure how much that would change the flavor. Kitchen Bouquet would work great but probably not lend a very "root beer-y" flavor to the ice cream, LOL!

Boy that pasta dish looks divine.

After I pulled out the bone and cut it in half, half it was finished in the oven over cabbage mixed with home fermented kraut and potatoes. That was dinner yesterday.

Tonight a more sensible wild salmon, brown rice with broccoli. Though I’ve just gotten done eating I wish I was having some of @passedpawn ’s ribeye!

I've made rootbeer several times before. Rainbow Flavors always worked great. Maybe look into that.
