I'm drinking some apple wine that I bottled a few months ago. (it's too strong to call it cider) I *thought* it was finished fermenting when I bottled it, but obviously it wasn't because I pulled the cork and got a gusher. Too bad the bottle wasn't chilled. It tastes very much like extra dry (not brut) champagne; ever so slightly sweet and kinda spicy. I like it a lot, and this is the last bottle cuz it was only 1 gallons. :(

I'm just glad it didn't blow the cork or "bottle bomb" It isn't all that fizzy, but it still has a little sugar in it so the yeast wan't done yet.
 
Thanks Scturo. My apple wine looks just like that. :) (I gave blood today; I probably shouldn't have drank the whole bottle. I'm having to correct a lot of typing errors)

I need to make this again, and put it in beer or champagne bottles.

That's awesome! Can't even buy one here in NJ. Stupid laws. I think carrying a stick here in NJ is illegal.

An advisory pint of HB coopers amber while trying to figure out what the funk to do with that piece of junk... ideas are plently but money isn't... specially when I'm at the same time trying to save for an eBIAB system :)
