Dafuq!!! How is it Russian? Owned by a Russian company? Is it at least still brewed in Texas? That sucks if it is. Won't buy it any more if that's the case.
 
And then on top of the Lone Star, my sample from my Heady clone. 1.074 to 1.016 in 1.5 days. And the flavor is amazing so far.

Just bottled my Heady clone today. Got a bit more efficiency than I calculated for and it went from 1.084 to 1.020 for just a shade over 9%. Did you use someone else's recipe or one of your own design?

Used the recipe from here, the Can you clone it thread. I used the recipe to a T, except for the Centennial. I didnt have any and subbed Falconers Flight in its place. Its currently at about 7.6%, but its still bubbling away. Flavor is great and cant wait to dry hop it.

And thats a shame about Lone Star. I knew most other "American" brews went to Europe, but didnt know they did. Ill stick to local brews then.
 
Coopers Pilsner tweaked with crystal malt (can't remember how much) and Saaz hops. Left WAY too long to lager (6 months?) but it didn't go bad.

Coffee & Water. I couldn't sleep so I prepared a stew to go into the slow cooker. It occurred to me that I've never actually made stew before. It smells good already so there is that. There are no mushrooms though @chefrex. :D I've been wildly productive this morning and all before sunrise. I don't like it.

It is raining hard, flooding the yard and the streets. I didn't bother to pull dog out of bed because it would only stress her out to pee in the rain. Hopefully it eases up soon so she can go.

I still stress out over the process and am lacking a few things that would make it much easier. A propane burner and larger brew pot, specifically... the heavy duty pot I have takes a very, very long time to boil on my kitchen stove. Excuses.

If you are planning to use Brett make sure you use cubes and not chips. They take longer to release flavor, which will give the Brett time to work. I usually use medium toast Hungarian or French. Personally, I like white wine like Chardonnay for sours, but if I have to actually the wine prefer a red like cab Sauv or Malbec.

Also, Brett doesn't need fermentables to impart flavor. There is enough other stuff it can chew on.

Quick question. I'm doing an all brett lambicus beer. How long do I need the starter to be going for to get enough to pitch? This is my first venture with brett and I'm honestly stumped on where to go with it. I'm thinking just some just 2 row, some crystal and some munich. Maybe some cascade hops.

Brett is slower, so I would probably give it at least a week or more on a stir plate. Maybe a couple weeks if no stir plate.

Obviously there are exceptions based on batch size, OG, yeast viability, etc.

I have a decent Malbec on hand that I could use. I used chips once and there was some debate over chips, spirals, cubes etc. Turns out that cubes are widely preferred, at least in my limited research. Either way, I intend to boil them to extract color mostly. That sample I pulled is by far the prettiest this beer has been. I don't want to totally change that.

I intend to pitch some more brett dregs. I just need to figure out which beer I can drink or buy and do that. Such a bummer?! haha

Also, I found the infection on 6/4/14. I pitched brett dregs on 10/21/2014 and will pitch again soon. I'm trying to figure out how long I need to let it ride before I can bottle. I intend to bottle and cork. It is at 1.002 now but I assume it may move slightly if I add the cubes and the brett. It is such a fun process and all of this being unintentional.

If you want to stay inside, get a heat stick. There are ones you can just put in the pot and they hang over the side or you can drill a hole and go with a weldless fitted one. You can get a 110v heat stick that will simply aide in the boil process. I would get something like an 1800 watt stick and then you should be good.

Not to deter you from propane, but the burner and the pot purchase combined, you may just be fine buying the stick.

Why would anybody outside of the state of oregon not be rooting for my underdog Buckeyes? Young team with their 3rd string qb playing against a team everybody thought would be there. You would have to be a complete a-hole(Remmy) to root for the ducks tonight.

I don't have a stir plate so I'm thinking about starting it today and brewing not this Friday but next. Thanks for the advice.

Haha I am rooting for them, just have to give you a little schit. Jones is a beast for a 3rd string QB who would have been starting on most other teams to begin the season. Should be an entertaining game tonight! :rockin:
 
Another week in the office. Austin this weekend. Having water and a energy drink. Got great efficiency on my brew yesterday for my sour stout. Was initially a 1.066 but got 1.082 :ban:

Same thing happened with my saison Saturday. Shooting for 1.075 and got 1.084. Cant ever complain about that!

I am rooting for oregon, and I live in pa, I'm a cuse fan so I was rooting against fsu and for Oregon cause I hate Jamesis Winston and they are a Acc rival, I don't hate Ohio state but I don't like urban Meyer and I thought him tressel was a cheat, the organization has turned it around tho, I like Marcus Mariotta and think Oregon has a good program, for those reasons I am rooting for Oregon, a lot of pa residents are rooting for Oregon tho, psu fans hate Ohio state, go figure
