I think you'll find that it's a Doppelbock if you tilt the sample jar just a smidge.Yeah, bjcp says 1.072+ for Doppel. Just under that, so I'll call it a Dunkels Bock.

Winter ale brewed by some Connecticut Vikings with spruce tips and smoked barley, 8%. This is tasty, malty, slightly sweet but I don't get spruce or smoke. Disappointed since I really like smoked beers but otherwise this is a good beer IMHO.

Bitte EIN bitGerman Pilsener. Light, crisp, slight malt aroma/taste and hop bitterness. Very enjoyable!View attachment 870580
That’s exactly how I brew. Mash with 5-6 gallons in an 8 gallon kettle on the stovetop and then about 15 minutes before mash out, I start heating 1.5-2 gallons of water in a stockpot to get to preboil volume.A cuppa home-roasted coffee (Papua New Guinea), before I go crush grain and start my brew day. Going to be ambitious and brew a full 5 gal batch of Doppelbock BIAB on the stove top in an 8 gal kettle. The mash will fit if I hold back a couple gallons.

Looks great. What is the rest of the recipe like? Hops?Cool rainy day in Carolina. Enjoying a delicious HB Mocha Stout (mostly chocolate, Breiss 350° L and some coffee 150°L). Served with 65/35 beer gas at 38 psi. Very satisfying.
