HM limoncello while preparing for the next one.
I have been thinking about making some HB limoncello myself this autumn. I am curious how much lemon zest did you use and how long do you let it steep before dilution?

I use 10 lemons for a full fifth. This is a half batch with 5 lemons (since that's all I had). I let them steep for a couple of days then sous vide in a zip lock bag for 3 hours at 145°F then steep a couple more days before straining, diluting and sweetening. This makes a tasty limoncello in a lot less time. Good luck!
 
How the heck do you top this? Paulaner is one of Munich’s primary brewers – and this Pils shows it! At 4.8% ABV, I’m guessing this Pils is about 25 IBU. This is a fantastic Pilsner, perfectly balanced flavor - slightly malty and hoppy at the same time, great that both shine through in the same beer.

Paulaner has been cranking out quality libations like this for thirsty Bavarians since 1634. The rest of us peasants have been humbly existing off whatever cast-offs the Bavarians don’t drink, which isn’t much! Send us MORE!!!

You might see Paulaner at your Oktoberfest celebration tent as it is one of the approved Munich breweries. This beer isn’t that though. Their Festbier is the current de-facto STANDARD. Their PILSNER stands on its own through and definitely is one of my favorite brews. I could drink this by the galvanized bucketful, 2 gallons, minimum! Open wide and dump it in! Prost!

Another selection from the @pshankstar care package: a nice Scotch ale from Rohrback Brewing, Rochester, NY.

I have just the glass for this one.

The beer is silky smooth, rich maltiness with nice, chewy caramel goodness. Not too cloying, as many Scotch ales can be. Finishes clean. Me likey!

This makes me extremely happy. It was the last beer my best friend had when we were together back in February. A month later in March he suddenly passed away. I wanted to share this classic Rochester beer with @MaxStout in honor of Mike. @BongoYodeler I'm glad you got to enjoy this beer too during your last trip to NY.
It will forever hold a special spot for me.

I too have a sad memory associated with that beer. I was in Rochester, NY for my brother-in-law's funeral.

And some Australian Sparkling Ale made with the cake from the bitter. Really kicking myself for not crashing and fining this one, but since I hadn't used the Whitbread strain in ages, I wanted to test it's flocculation sans assistance. Got it, needs assistance.

When you hear the word Bell’s and IPA, you have to know this heavyweight is entering the ring. In this corner, Comstock, Michigan’s own, Bell’s Two Hearted IPA!

This beer is a Midwest classic. I had a daughter married in Michigan not too long ago – seems I have and endless stream of daughters doesn’t it…? HA! Anyway, it went something like this “Dad, we have to select the beer, but I can only give them one or two choices, Coors and some place called Bell’s.” Well, that’s an easy one, Bell’s it is! Bring in the Keg!!!!

Honestly, not all attendees of a wedding crowd are into IPA’s. I mean sure, all the groomsmen were, either that or fizzy boozy seltzer water. Heck, there were even a couple beer drinking ladies there…. My choice was their Amber Ale, and it was a great choice for the party too. Safer in a crowd than an IPA, but that’s slowly changing!

Bell’s has become a primary producer of Midwest favorite brews and is the hometown favorite. They yelled “Go Blue!” All I heard in my mind was “Go Bell’s!!!”

This is a terrific IPA. 7% ABV, it checks off all the modern IPA boxes, and dry hopped with Centennial hops to boot. Check out that color! Head retention, great lacing, this is IPA Nirvana! Cheers!

Another pick from the @pshankstar care package. A blended IPA with a dose of sour. I'm generally not a fan of sours, but this one is balanced. And lots of tropical fruit on the nose and palate.

I really enjoyed that one and thought it was quite unique. I’m glad you like it too.
