I brewed this beer back in March.

It’s a Sorachi Ace Saison. I pitched WLP500. Shortly into fermentation it developed a nice pellicle. It must have picked up a wild bug at some point. So I doubled down and pitched some more bugs that I cultured from Trillium Wild.

What a great beer!!! Still very Sorachi Ace forward but more complex than an ordinary saison.

EDIT: I changed my mind. This stuff is terrible. Luckily, I gave most of it away to my boss, and he likes it.

2nd EDIT: Maybe if I gave him some good beer, I could get a raise!

I walk away for three days and I miss 45,008 photos of beer. In any case, I'm not gong to dwell on it and if I break a leg or something and find the time, I'll catch up.

There's a local shop, Woods Wholesale Wine, that is worth a stopover if you're in SE Michigan. Why am I plugging a place? This guy set aside for me three, four-packs of an Ellison beer (photo below) for weeks and weeks based on a comment I made months ago. True professional. Customer service out the roof.
It's a 12.5% stout and very nice. Photo could use some work.
