Thinking about trying a turbid mash tomorrow on a lambic. Will the mash have the same affect on the finished product if Im using malted wheat?
Good question. I'm not sure. I was wondering the same thing. I don't know how much starch is converted to sugar when wheat is malted. I already had a bag of wheat malt and this was sort of last minute so I was thinking about using it. I ended up buying a bag of raw spelt thinking I'd save my 'expensive' wheat malt, but the damn spelt was just as much and it's not even organic.
