Okay, finally think the carb is okay on my Mowing Mt. Ranier Cherry Ale. This is the one that got an infection in tertiary...maybe from the cherries in secondary, not sure. Anyway, stuck one in he fridge this morning. Last sample was pretty unimpressive, but I think it's decent enough now to keep, rather than pour down the drain. The aroma is very Citra and I guess that's cherry that I'm getting with it. With the carb in the right zone, I think the flavor is okay...not an award contender, but very drinkable. I don't know how it will age, but it's okay now. I probably need to just go ahead and refrigerate as much as I can fit in my little beverage fridge.

Ok I feel dumb for asking, but what is a tertiary? Is it just a fancy word for a secondary with fruit it in? Looking at making a strawberry blonde as well and everything calls for a tertiary.
