just had about 1 1/2oz sample of my Helles Bock gone wrong. Brett & Pedio. 9% ABV funk. now onto my Irish Brown. and watching Adventure Time with our 3 y/o.
 
Now on to AllenH's RIS - this is a big one with a lot of flavors mingling. In a very good way - well done! :mug:

Yum! I'd love to try that if you're willing to give away a bottle. I'll give you something in return whether HB or commercial. :)

I got the racking done and pasteurized the peach-pineapple tepache. Both are small batch, but you know you're always on "The List". The tepache is pretty much ready whenever. I think I'm going to sit on the saison a couple of months.

I also have about a dozen bottles of non-alcoholic ginger beer. It's very sweet. Probably pasteurize those tomorrow night. I have a brother and a sister that each married Trinidadians, so they will probably get these as gifts. I may only open one to carb-test. However, I'm making a "second runnings" batch using the strained ginger and spices. I'm going to let this one ferment. OG is 1.069 and I think the ginger still has enough flavor after just one day, to give a longer, and fermented brew plenty of flavor. I put you down for one of these, too.

Finally kicked its predecessor this afternoon and got my second attempt at an American Wheat using Mosaic hops on tap. First attempt was almost on target: the bitterness was spot on, the aroma was good, the orange was in the background where it belongs...but the Mosaic character needed a doubling of the final kettle addition to shine.

This one's a keeper in the rotation...
