9 months is practically a year…

having an older bottle of brett dark saison brewed with figs & dates, another one I wish I'd carbed more

I seem to have the opposite problem. I tend to overcarbonate to perfection, which I think is around 4 volumes. I often shoot for 3.5 and then get some additional carb from the brett. I've got two beer with brett in secondary that I dry hopped yesterday trying to push them through to clear up the fermentors by next week and I'm a litttle unsure what to aim for when I bottle them. I'm thinking of priming for 2 volumes assuming they'll end up at 4 or better.

Anyone know of reliable data on how temperature effects oak? I'd assume warmer means more extraction, but can't seem to find anything in writing from a solid source. I'd like to oak my current BdG while lagers so it only takes two months instead of four.
 
Cracked a bottle of this Sam Adams 13th hour. Its a Belgian style stout that's been barrel aged... I can honestly say this is the best sam Adams beer I have tried.. don't go for it often

Had a New Castle which was the best beer at the restaurant. But they did have Macallan 18.

1 beer + 4 scotches. Smacked.

Dinner was awesome! Now I am going to pass the flocc out!
 
Caramel Apple Hard Cider with a shot of something to kick it up a notch.

Knocking em back. I dig this one, but I wouldn't call it an English IPA. Maybe it's an old bottle, or maybe it's just because Fullers always seems to be on the malty side of English beer, and this seems like many other brewers ESBs.

I would have to agree. Last of my stock of Cherry Stout though. I think the store across the street of where I work has some more though.

I have one Cherry Stout and Double Cream left. I'm hoping my mom is able to come through with some Hopslam again this year. I'm a big fan of Bell's. they haven't disappointed me yet.
 
oh yea. Plus i'll get out early Friday for working late tonight

I'm trying to decide what exactly to bring Friday. I know there's a year old imperial stout from Two Brothers I'm going to bring. Do you want to try the 4/11 Samael? I was thinking about bringing that as well.
 
Hopslam... So good. greenbush brother Benjamin is so similar... Although at 15 a four pack even more expensive then hopslam...

Finishing up the night with my crabapple/Fuji blend cider. Finally, it's got a nice, light carb to it. Mmm...maybe one more.
