Sip from the freezer of my first HM limocello. Hybrid trad and sous vide. Couple of days in 100 proof vodka, 3 hours sous vide at 135°F, then a couple of more days on the zest. Sweeten with monk fruit so no additional calories. This is really good. Letting it mellow for a week or so, then try it again.

First keg pour of 021 Kolsch. Man I love this yeast. Hate the day when something happens and I lose it. Love a Kolsch w Crystal, love that hop. Has that subtle lemon character. Beats the crap out of the split with S-189. Learned to never underestimate the addition strain makes. S-189 yeast is no slouch! I’m gonna tattoo 021 somewhere when it’s gone.
Brewing a kölsch soon...looks beautiful. Just want to understand, what yeast is it you like? Both? Thanks!

That's a great idea using Monk Fruit. Curious how it comes out instead of sugar.

Buddy gave me this monstrosity of a beer. Experience beer. Comes in waves. First wave was WTF? Second was straight lime. Third wave was finally orange/Vanilla. Don't know if that was intentional but glad it was free.

HB IPA and RiS to round out the last two nights...

A couple months ago, I had a chat with the dude at the pub down the street about the best beer he ever had. He told me about a Brew Dog beer from many years back called Neon Overlord. It's a Mango Habanero IPA. While not my thing, it sounded interesting and a challenge to make.

Brew Dog published their recipe book, and I found the recipe in there. The numbers didn't look like they added up (i.e. OG/FG didn't match ABV, even with mango additions). Nonetheless, I approximated it and now I am drinking a HB 8.6% ABV Mango Habanero (Imperial) IPA. I mashed lower than I should have.
The recipe called for 250g of Mango for 19 litres in the FV, and I used 1 kg of Mango for 23 litres. Still think it needs more. Smells nice anyway.

The burn starts quick, but fades. Think I could handle at most one of these a night.

Was just in Minnesota and Wisconsin a couple days ago and didn't see any Grain Belt on tap anywhere I was. Not that I really like it, but I like to try it every once in a while and it reminds me that beautiful part of the country. I need to find one of those glasses next time I'm over there.

I really want to try and make their IPA. I saw the youtube vid that the aptbrewer did and it doesn't look that tough, but the ingredients are expensive compared to what I have been brewing. Maybe one day. Rock On!!!!!!!!

EQ does pack a punch of hops. This one is a good one. I don't mean in a bad way but I don't think I've ever had one of theirs that I'd call a crusher. Something you could slam a 6 pack of. They 'em hop bombs
