I have the second of several attempts to craft a wedding brew in the fermenter, the first approaching the end of secondary, and the third in my feverish brain. When two long time friends... over 30 years, who have lived together for that long also, announced their wedding, I decided to send a wedding beer (s) to represent me.......... I absolutely do not go to weddings. The main brew will be a hibiscus beer, and I'm hoping to get a deep ruby red color and tart flavor. I'm making it in 3 iterations with varying recipes. The first is a saison, the second an ale made with -05, and the third will be a lager. The grain bills vary, but all will be hopped entirely with Nelson Sauvin. I will decide on a final recipe based on the results of the 3.
The ladies in the neighborhood have all volunteered to be "guinea pigs" and test these. The project has stimulated a lot of interest......... it's intended to be a "girly beer".......but a pretty strong one. All will be in the 8% range. I'm keeping the body light, using invert sugar to "bump" the ABV. I've advised my "testers" to make sure their husbands renew their viagra prescriptions. The first version will be sampling about next Friday... a bit green perhaps. The big day is June 20th, so I have time to play. I also plan a pretty stock red ale for the guys.... My plan is to keep it fairly light bodied, and hop it with Zythos only...... at about 50 IBUs with a lot of late addition hops. Zythos is a great, easy drinking blend that most people like.

I'm looking forward to the "testing" phase...........Nothing the ladies like better than an excuse to drink in a good cause ;-) My testers are mostly married...... unfortunately, so I won't have a chance to see the effects first hand.......most likely.

I purchased a Tap-a-Draft system to use for this....... I'm not into kegging yet, and my 2.5 gallon brew size does not work well with the Tap-a-Draft. I typically get a bit over 2 gallons yield. This offers the unique opportunity of blending....... I can bottle, or I can blend the left over.

Why send flowers......... when you can send beer??
