Hey all, looking to make a wedding beer or mead. Thinking something with plums, hibiscus, maybe rose hips? Any suggestions on how build a recipe from that? Open to switching and removing any of the ingredients. Looking for a 5/6gallon batch. Thanks!
 
some kind of wheat would be my first idea. make it like a big body saison and finish with champagne yeast.
 
You might consider taking a simple Belgian Wit recipe and then lightly spicing it with some of the things you mentioned. I did one with the standard coriander, sweet and bitter orange and added a little agave. It took a little more conditioning, but it turned out well.
 
I've done several hibiscus meads in the past that have turned out very well. I usually make a tea using 4-6 ounces of dried hibiscus flowers for a 5 gallon batch, with 12-15 pounds of wildflower honey. It's been a favorite among my family and friends, and ends up a beautiful dark red color. Sweet with a hint of tartness from the hibiscus.
