Hello all!

I am going to be brewing 12 gals of our favorite IPA and the plan is to split the batch into two brewbuckets - one will get Imperial Juice yeast, and the other will get Kviek yeast. It will be our first time using Kviek so I am curious about it!

My question is what water profile would go well with both yeasts? I am debating using BrunWater Pale Ale (Ca 140, Cl 55, SO4 300) or a NEIPA water profile (Ca 100, Cl 200, SO4 100).

Personally, I am leaning toward the Pale Ale profile to get that dry/crisp hop flavor, but would like to hear your thoughts how that would work out with Kveik yeast.

Water: ???

Grains
22# pale malt (65%)
5# white wheat malt (15%)
5# flaked oats (15%)

Dryhop for Juice only: 2 oz Nelson Sauvin (10.6%), 2 oz El Dorado (15.3%), and 1 oz Citra (12.8%)

A lot of it is just personal preference. I've tinkered with my water profiles and am still experimenting but I haven't really been fond of the batches with really high SO4, but some do. At this point I think my fav is pretty balanced, about 100 SO4 and Cl, 80 Ca, 25 Na. I've raised the Cl up to 150 and lowered the SO4 for some of my hazy IPAs and that was also pretty good. Like everyone else though my brewing habits are evolving with every batch, I might have a different opinion a year from now.
